I quite like to experiment with non standard tyre sizes. I'm just wondering if this would void my issurance? Clearly aftermarket wheels are legal and many are not the same size as the original. Hence, non standard tyre sizes are used on such wheels. I'm thinking all should be OK as long as tyres are used on wheels within specification and I'm not going too far from standard?

Potentially yes, if you don't tell them. You are meant to declare any changes (even purely cosmetic ones).

In my experience they will try to charge more for any changes, I had quite a struggle to get stainless exhausts accepted on a Corvette as not a performance upgrade.
