Computer on my C63 says 18.8mpg over 6100 miles since September. Made up of a mixture of local short runs and longer NSL / motorway journeys. Very little in town driving.
I've never noticed slow changes in manual mode, but then I've only ever driven normal manuals before so I've nothing similar to compare it to.
Try pressing and holding the down paddle in manual for quicker downshifts.

The demonstrator I had earlier in the year had the same problem. Got it home to find the near side hadn't caught properly and needed a bit of a slam to sort it.
I attached a Manfrotto suction cup to the glass of the sunroof and then attached a Manfrotto Magic Arm to that. The camera was mounted on the magic arm but it was also braced against the passenger seat to reduce the amount of bouncing around.

I did create a shadow but struggled with it. I think it would be harder than it appears here - possibly even multiple hard shadows! A step too far for me at the moment.
Good point about the reflections too. That is probably something I could have a stab at.
