Is there any common issues on the 2007 1.8 petrol c180 kompressor causing coolant to get into the oil, such as oil cooler etc?

Welcome.

No, it's not a typical fault on the M271 engine.

But both a leaking heat exchanger (oil cooler) or a leaking head gasket are good guesses.

BTW, if driving mostly short distances in cold weather, it's common for condensation to accumulate at the top of the engine e.g. under the oil fillet gap - it forms a 'mayonnaise' looking residue. This is normal and the water content will evaporate once the oil reaches working temperature. If, however, the 'mayonnaise' residue is spotted in the engine's Lower parts - e.g. on the dipstick - than this isn't good, and it means that there's water in the oil.

with the oil drained and sump plug out then adding a coolant pressure tester, you can see direct coolant coming out of the sump. i've been told the thermostat can cause coolant to get into the oil system on these models.

Wow I'm no expert on these engines either but from previous experience of antifreeze in gearbox I can say that coolant in engine is not good. Anti freeze in moving engine parts could be fatal. I can't see it getting in through the thermostat unless there is some actual physical space where it can leak through, there's a good chance it's the head gasket.
Maybe one of our proper experts have got better ideas, I'm sure someone will come along soon.

I changed the thermostat on my M271 engine a few years back. There's no way engine oil can get anywhere near it.

If the thermostat is seized shut (which is rare, they usually fail open), then the colling system will boil over and depressurise via the reservoir cap which has a built in pressure release valve for these eventualities. You'll be losing coolant, the engine will overheat, and blow a head gasket. But that's the only link I can think of.

That's the thermostat housing:
