A124 Soft top hydraulic fluid

Can someone please advise me on the correct hydraulic fluid for my soft top roof.

It will be in the handbook or your local MB parts Dept can advise as to the correct fluid.

There's often a label with the oil type on the reservoir, cap, or somewhere nearby. There definitely is for the suspension (ADS) on my R129, which is from the same era - I don't believe it's mentioned in the handbook as it's not considered to be a 'user serviceable' thing. A dealer would certainly be able to advise though (and probably supply the right oil for a reasonable price). I wouldn't personally use anything other than MB fluid - just not worth the risk of seals etc. being affected by the wrong (or off spec.) oil.
