This and that.
My '94 E320 might have a sticky pedal.

When stationary, it's very difficult to hold the revs at between 1,000 and 2,000, as it's as if the pedal can be either 'on' or 'off'. When driving, this means I tend to leap away from traffic lights, and look like a bit of a berk.

I wondered if this was usual, or if I need to mess about with it.

I'll be interested in replies to this as my '97 SL500 has a similar problem. I've crawled all over the pedal mechanism and linkage under the bonnet and can't see anything obvious. I asked the dealer to look at it last service and it did seem a little better afterwards, but it's still noticeable. It's not bad, just a bit irritating when you're trying to drive smoothly.
 
Had a similar thing on mine, it turned out to be the actual pivot on the pedal. The pivot wears and allows the pedal to twist and not pull the cable straight, this caused it to catch as it went through the bulkhead and felt like it had a 'step' in the operation.

New pedal pivot assembly fixed it. You could also check the freeplay at the end of the cable where it attaches the throttle pot. I am presuming yours is ECU controlled and not mechanical.
