How do you use the air con on the W205 C Class saloon ? also is their a reset sequence ?

Turn on A/C set it on Auto, set temperature and leave it alone ...
Reset via STAR.

As above, set temp you want press auto and let the car do it’s thing

Aircon on auto is a thing of beauty, except when SWMBO sets passenger side to cooling (hot flushes etc) and I can feel the coolness from that side conflicting with my warm side, must be a terrible internal conflict for the auto system!

I do exactly the same, on 90% of the time. Have not done anything to ACs in this country. Use it or loose it
