Altering photos

Ive been given the task of altering photos taken from a works do,What i need to do is take the face of a certain boss and put it on various objects such as other peoples bodies or even merge it on some kind of animal ,What is stumping me at the mo is I dont know what any of the software is called that can do this,Any ideas? Thanx

PS, its not my boss so I can be as evil as i wish
