So when I brake I sense something is not right.
If I apply a constant equal pressure the car will start to slow but then all of a sudden it will snatch/grab as if I had put my foot down hard.
I have had a search and found the SBC braking may be malfunctioning but I'm not sure if I even have this??

No SBC on a 2007 model.
There may be pad material deposits on the disc. Try a few high speed hard braking but don't come to a complete stop. This should clean up the discs.

Have a look at the discs through the wheel spokes, any grooves on the disc ? if so change them. Note in my experience the inner surface of the disc that you can not easily see always seems to be more worn than the outer.

Or (when cold) spray a load of brake cleaner all over the calipers and rotor surface for an attempt at 'quick fix'.

Forgot to mention ,these are new discs and pads fitted recently

Errr, that was a pretty important thing you forgot to mention in your first post if you don't mind me saying.
