My SL 350 (R230) has 17 inch alloys, I want to fit a set of 18 inch alloys is it just bolt the on or do I have to communicate to the car that larger wheels have been added

I would not think so, but if you were to pass wind while driving, you would need to get the added fart coded!
I remember the good old days when if it fitted, bolt it on. None of this crazy coding every time you change something.

Just a straight swap from 17 to 18"
Just ensure the 18" wheels are the correct spec for your model.
 
I went from 17” 245/45 up to the optional size of 18” with 245/40 tyres. Rolling circumference on the 18 is as near original. Made sure the ETA offset was near identical as well. Nothing else to do.
