how likely is an insurance assesser going to write off a 21 year old Mercedes that has damage to rear bumper/wheel well/rear light cracked

How much is the car worth and how much is the likely cost of repairing it?
If the car is presented in an excellent and cherished condition you may find the assessor helpful (be nice to him or her!, they are human too). I had my W124 estate smashed a bit when a Porsche pulled out - the cost of the repair was a couple of thousand and the assessor could easily have looked at the value of cars on the market and written it off. He didn't because he could clearly see it was in good condition and well looked after, and he remarked that they didn't build them like they used to, and had it been a later Merc he would have written it off (the headlight unit would have needed replacing on a later one).
