So, I found that not only are W124 electronic IR key fobs no longer available through the dealerships, neither are the emergency keys themselves from the VIN.
We lost one of the pair we've had for the last 10 years over Christmas and have managed to get an emergency key cut via the SL Shop using a photo of the remaining original - it should be with us later this week all being well and we can continue with the other IR fob as per previous.
The problem remains now what if the remaining IR keyfob is lost - all that remains is bypassing the immobiliser via the relay and using the manual key on the passenger door to gain access.

As I see it, there's a couple of options - replace the ECU under the rear footwell with a good secondhand unit that has key fobs associated with it or, fit a simple modern immobiliser with a signal to operate the door locking system, keeping the manual key for ignition only - which might be preferable perhaps in the long term?
Has anyone done this 'conversion' and if so, what brand or gear / type of system have you used??
