Kitchen knife set

No hostess trolley but the serving hatch is great.

My house was built in the 1950’s and still has quite a few original features like picture rails and an open fire.

I love them but my wife says it’s just because I’m too tight to modernise [emoji3]

She’s probably right though.

Pull-through sharpeners like those are good for cheap to average softer steel knives that need regular sharpening. But they’re too aggressive for harder quality knives that retain their edge for longer because they can rip the steel on the tip.

Our main knife sets are not cheap to average - can't remember what I paid for them as the first set was bought in 1985 and the second set we gave to my mother a year or 2 later and inherited in 1997, but they were not cheap!. They are Sabatier branded and stainless steel rather than non stainless. This sharpener does an excellent job of putting a decent edge back on them after my amateur efforts over the years with a steel. We also have a couple of cheap knives that are used daily and need sharpening almost weekly. I also have an American sharpening set with honing guide and 3 different honing stones, but it's such a pfaff to use I seldom bother.
 
Sabatier are very durable and comfortable to use. We were given a complete set as a wedding gift 20+ years ago. They are used daily and are also 'dishwasher' friendly. I have a ceramic sharpener which works a treat and was bought via a Sabatier Agent for about a £10.

Global do seem to have cornered the market although (personal warning note) a friend who is a busy chef, will not use them as he says they are prone to slipping in the hand when you have wet/slippy hands. That was a personal statement and not a statement of fact ;^)
