Hello! I want to put a len on the dash to indicate that the aux fans are workin. How?

LED, 4.7K resistor, length of wire - connect LED and resistor in series and then connect across the fan terminals.

Can you not hear them cut in/out? they only cut in/out with A/C pressure, they do act as additional engine cooling in an emergency but the engine has to be pretty hot for them to do so.
Do bear in mind when the fan(s) operate they will/can operate at variable speeds, this may have some bearing on illuminating the LED, if the Voltage was to fall to low.

Hello! On my car the aux fans go "on" at 90 ºC always!

Bear in mind that your LED will only tell you there is power to the fan and not that the fan is actually working.
