I can recommend the Agama AG launcher as a replacement for the standard one.

The launcher is the UI. It changes the layout and look of the icons etc.
The Agama one is specifically designed for in-car use where the default is more like a standard Android tablet.
The centre part that is currently showing the Mercedes badge can be set as a clock, speedo, album art for what is currently playing or a mini map if Navigation is active etc.
