I believe it might be the same as the W219. Go into settings on the dash computer, usually lurking about there. Not sure if its the same though, or perhaps centralised through the command center.

As Post# 5, the folding mirrors are programmed from the steering wheel buttons and the dashboard display.

If you have the user manual with the car, it will detail how to do it there.

Thanks for your help. I've looked in the menu's but nothing about mirrors that I can see, have looked in the manual too. What would it be under?

Did you find Settings within the menus? press on that and it should open the option to close mirrors on stopping. I recently changed mine to stay open as I don't fancy the cable breaking after repeated closures. Just press the close button from inside when I stop.

In my manual, page 155-6 gives details on how to set the parking position of the mirrors.

Yep indeed! Looks and drives like an E55 Estate with full AMG suspension/brakes/wheels/exhaust/body kit but has the benefits of a CDI. Love it!

I'll have another look but for some reason the mirror option doesn't seem to exist....

Just had another look and there is nothing in any of the settings menu's about the mirrors. Is there anyway that it could have been disabled?

I think mirror folding needs to be enabled by STAR. However, constant folding leads to broken wires, so you may not wish to have it enabled - I've had it disabled now, because of that very problem.
