My Extensa has an 80gb 5400 Harddrive, simple question would a 160gb 7400 16 (whatever that lot means) be significantly quicker?

Yes. Different connectors.

SATA is faster.

simple answer is yes it would be quicker reading and writing to disk

But you have to match the type of disk you have currently. If you have an IDE disk, you need to replace it with an IDE disk and vice versa.
