I'm running a E211 with Command/satnav etc, linked to this is the full factory telephone installation, up until now, I have been using a multi-sim via Vodafone, enabling to keep the 6310i in the car, and have something a little more modern in my pocket.

Vodafone have now stopped multi-sims, does anyone know if its possible to install a bluetooth adaptor into the existing 6310i cradle?

Yes, there's a Bluetooth module which impersonates the Nokia 6310 that you could buy. It's called Viseoo and you can get it from Comandonline (run by Alfie on this forum).

You need the ViseeO MBU-1000, it just slots in, car thinks it has a 6310i, and it bluetooths to your phone
