The only questions to ask are, "do I want it?", and, "is the deal right?". On that basis the value of the extras and the car itself, is a matter for your own assessment.
As it's a personal choice there is no definitive answer to your headline question. The word 'value' means 'desirability', which is a personal thing. Other people's opinions only have relevance in regard to putting contrary views to make sure you've covered every angle, and thus help you decide.
If you're happy with the purchase that's it; you've got value.
To spend money on extras wondering if you have monetary value is akin to buying a big engined car then occupying your mind with mpg. Occupy your mind with such matters before you lay out the cash.

I once made the mistake of carpeting my flat in a similar colour to your mats. It even showed the dust.
Mind you the mats are AMG so they can be gone quickly!

I don't understand the objections to light coloured mats. I had Orion Grey mats in my CLK and they rarely looked dirty. I now have black mats in the C350 (wasn't given an option) and they look mucky all the time!!
That's the problem with dust and general dirt being light grey/brown and NOT black! But having said that, your mats do look VERY light.
As some others have said, the options are only of value if they're what YOU want. For instance, I wouldn't be without electric seats because my wife and I drive the car and we're completely different builds (thankfully!), whilst for others they're not needed.
