IF you aren't losing water, issuing steam or showing other signs of overheating, and thing revert to normal after the hill, I'd be inclined to distrust the gauge. They aren't the most accurate things over the whole range.
120c would produce a lot of pressure in the cooling system, about 16psi, I think.
