I was fortunate enough to get two working keyfob/keys with my 2000 plate E320.

One with a silver/chrome surround, one without.

The one without is a bit battered to say the least, the end is missing (the protective cover over the IR emitter) and the push buttons are cracked.

Is it possible to transplant the internals into a new/second hand shell?

and, if so, where do I get a "shell" from.

There are multiple threads about removing the internals of an old key to a new housing of a key from eBay. You just have to have the same key design (the old black or the chrome for both, the old internals do not fit to the chrome key housing).

Why do you feel you were lucky to have two keys? I would never consider buying a car without it having the original keys (two for new ones, three or even more for older cars).

Also since the other key obviously is a new key to the car, hopefully the car is coded for two keys only, the ones you have now. Theoretically the previous owner may have had coded three keys for the car and kept one. The workshop could double check this (if you are equally paranoid as I would be).
 
I feel lucky as there are two keys, not just one....

Does anyone have any ideas as to where I can get the external part of the key?

agree ebay is best place they are usually on there.
