In the good old days you just needed a momentary-contact switch and a conventional switch - and a few connectors and stuff.
Modern ignition switches are much more complicated. For example, they cut power to ancilliary circuits (such as headlights) whilst starting, but not primary circuits (such as sidelights). Heaven knows what other signals are sent from the ignition switch at start time to a modern ECU-equipped car.
I would think it's do-able, but it is going to take a lot of work and a fair amount of time with the wiring diagrams. Good luck.
