Seems to have been stolen for the engine and transmission.

Why would it not be recorded?

The only explanations I can think of are that either the owner wasn't insured for that loss at the time of the theft, or the insurance company that presumably has written it off hasn't recorded it yet.

Self insured fleet or hire car.

Seems expensive to me (£6k at moment) for an older model car missing some vital parts, recorded or not...
