Jaguar XJS convertible, post 1994 model with the AJ16 4 litre straight 6 engine, the V12's are just to complicated for a DIY restoration IMHO.

Also I would love a nice little late Triumph Spitfire MK4 or 1500, as it the first sports car I fell in love with as a boy back in 1972.
