All sorted. They were very apologetic about the whole business. The car with the missing TPMS valves and centre caps was a 2014 C Class belonging to a dealer and hadn't been collected so the missing valves hadn't been noticed - but no doubt they would have been once the car came up with error...

They found my caps once I sent them a picture. They don't want the metal valves, but nor do I so they are coming out with rebalancing etc on Wednesday. Makes me wonder why they even put them in. Any way, hopefully sorted.
