I’ve noticed with my GTR at very low speeds (manoeuvring in a car park) that the front tyres scrub on full lock, I’m using Cup 2 tyres with about 5mm of tread left - is this normal??

My expectation is that it’s normal for something like a GTR (wide low-profile tyres, limited slip diff, fast road geometry). It’s (almost?) impossible to avoid on full lock IMHO.

The Cup 2’s will skip during low-speed near-full lock manoeuvres and will worse as the tread blocks wear and temperatures fall. Completely normal. Cup 2s are great tyres, but they’re compromised on the road unless driving very hard l, for a long time, on a warm, dry, summer’s day.
