Ac timing question...

Hi marvel team,
I have a W124 E220 made in 1995,the car is equiped with a climate control,in summer the climate is very hot,I adjust the temp. roller to the min. to give me maximum cold air,but before the temp. in the car gets cold(still hot),the I hear the AC compressor swithes off for some seconds and switch on again,I don't know why? it is very hot and the compressor is swithcing off though the temperature roller is set to give max cold air( all blue and under 18 C).
Is it like the japanese cars that the AC works with a timer that when the timer resets the compressor switches off? if so,how can I reach the timer and increase the period of switching on to make the compressor works longer?
Hope I managed to clarify the problem?

it may be to allow the interior coils (the bit that gets cold and which air passes over) to defrost -- they can get clogged up with ice
