Ok I’ve had a quick online look and search here but it’s usually quicker to ask you guys so here goes…. How to fully open the bonnet on this 2012 E250 coupe?

I’ve found these two silver brackets which can be removed but the bonnet doesn’t want to open any higher, it feels like I’m going to break something if I keep pushing it.

Anything in the manual ?

YouTube showed a guy disconnecting those two silver brackets in my photo and then simply and very easily pushing the bonnet up to the service position at 90 degrees…. Pffft I’m scared to try as it’s so tough!

Yay… did it, sorry all 🤣
Just disconnect the top of each silver bracket and then PUSH UP!
It now hits my car port roof 😇
I wonder why they made it so difficult? On my S204 the gas struts were somehow "2 stage". You raised the bonnet until you felt resistance and then if you applied more pressure, the bonnet would raise pretty much into the vertical. No removing brackets necessary.

I'm glad to see you sorted it out as I remember having the same issue years ago (the handbook only referred to resetting the bonnet if the pedestrian safety mechanism had deployed).

What really annoyed me was that I knew it was possible and when the car was in the dealer's workshop for its first service I noted the bonnet was open at 90 degrees. Having paid, I asked them how to do it and after several people running around and then calling the workshop manager out, I was told that they weren't allowed to tell me as the function was 'only for workshop use'. Perish the thought that some minion should do it themselves on their own car ;). Like you, I worked it out for myself but initially was a bit wary about the safety system.
