Got to admit, whenever I see a tyre pressure thread I get "oh no not again" flashing through my mind.
I always experiment, generally settling at around the "high speed" rating. The acceptable range is huge as the fuel filler flap fotos show, so don't be too afraid of going as low as the lowest or as high as the highest. There is a "never exceed" type mark on the tyre normally, don't go over that. There is a minimum on the filler flap, don't go below that.
Higher means worse ride but also lower tyre heating at speed. Lower means better ride but more tyre heating at speed. Other than that there's no safety difference - don't drive flat out with low tyre pressures.
