Its possible that the metal back plate is slightly corroded and bent in towards the brake disc and is catching it during rotation. Try pushing the back plate away from the disc. Hope this is a helpful suggestion.

How funny, I've got this same issue on my C63 at the moment, and have just finished replacing the front driver wheel bearing - literally just finished, the caliper is not back on yet - I'll let you know if this fixed the issue. I previously replaced the bearing on the other side, it was making horrible noises when driving but showed no other signs of failure, no play at 3-9 or 12-6 and no grinding, so dont necessarily discount the bearing
I’ve seen this mentioned about the parking brake cable hitting. Surely this wouldn’t happen on the front wheels?Wild shot:- as it only happens when the car is rolling, might it be the prop shaft? Either a worn joint or perhaps the standard solution to strange noises on the move, the parking brake cable hitting it?

You don't need to undo the knuckle to tilt the assembly if you have the right tools. A small E12 (ideally swan neck) will get the 4 hub bolts off in situ. I used the spanner in this set and got them off relatively easy, even though 2 of the 4 bolts are recessedAwesome!! Was it a simple enough job to do? Other than that it's just 2 21mm caliper bolts and the disc retaining screw, couldn't be much easier. You didn't say if you have wider wheels? I do, and having done this job twice now I don't think the standard bearings hold up well with wider wheels

It’s only the rear wheels which are slightly wider. The fronts are the same as the originals.

This is the bolt the guy struggled with on YouTube. Think it took him 3.5 hours!!I believe it's the same for both sides, I fit part number A2043300525, double check with the dealer as mine is a pre facelift, I'm not sure if there was any revisions of the part for the facelift but I don't think so.
Interesting you are running standard width wheels at the front, that dismisses my initial theory! Make sure you report back with your results, hope this helps

I thought the standard wheels were 8J front 9K rear, I'm running the same sizes as you - I expect the same wheels, from CM Wheels by any chance?
