I'd say that 205 was more like the max for a 7J rim.
As with all things the "experts" all offer different advice but sidewall roll and the associated poor handling becomes an issue with tyres that are too wide for the rim.
Agree with the above... You would be trying to squeeze an 8.8" wide tread onto a 7" rim, which would leave nearly an inch of "ballooning" each side of the rim - not good for the sidewalls as they would be under extra stress.
You can comfortably go one inch in width either side of the width of the wheel, purely for fitment. For peace of mind I'd recommend one inch wider to avoid kerb or stone rash and if you have tyres narrower than the wheel then IMHO you're asking for trouble
A 225 will most probably fit on a 7J rim. Some tyre manufacturers actually detail the size of rim a particular tyre is appropriate for in there detailed specs (for example go to http://www.yokohamatire.com and select the pdf spec for a given type of tyre).
However, the tyre size calculator link earlier in the thread should help you to determine what the correct profile of such a tyre should be compared to standard, as you do not want to be altering the rolling radius by more that +/-2.5% as this affects the speedo reading (as well as the gearing, so I'm told - though I've never taken the time to work this one out).
