Pairing a phone with Bluetooth

I've just changed my phone and using a SIM with the same number, do I have to remove the old phone pairing from the car or will it pick up the new phone as it has the same SIM number

I would say you need to pair your new phone again, as this is to pair Bluetooth device, nothing to do with sim card

Agreed. The new device has a different Bluetooth hardware address and this is what is used for the pairing.
