I can see the benefit in changing the valve core, but I don't see why it's necessary to change the stem other than as a CYA activity on the off chance that there's corrosion or damage to the valve stem sleeve and nut or rubber grommet?
Is the TPMS in the alloy wheel? I want to put another set of alloys on that I've seen for sale, they are 18" genuine amgs however I'm not sure how this will effect my current TPMS? Would it just be simple swap and drive? Or would I need to take the car to mb after the swap over?
They're modules built onto the wheel valve. If you're changing tyres, the valve stays put. If you're changing wheel, you'll need to have the TPMS module swapped over to the new wheel. I don't know if they can be removed and replace without leaking, if it's a one time fit thing...
You just need to change the valve steam ideally when you change the tyre (if you do a search on goggle you'll find multiple suppliers). The main module doesn't need changing unless the battery dies or its damaged,

So I can swap the sensors over to the new alloys? I want to keep my current tyres so they would go on to new alloys.. the new alloys do have tyres on them so I guess they will already have the sensors in place.. could i use those sensors?
