What is remapping? Is it really beneficial?

I must be a one off complainer, according to the remapman, I am the ony person who has complained about getting more power.
The point I couldn't seem to get across to him was that my car has a big (ish) torquey motor which was partly why I brought the car and the extra torque would be greatly appreciated,
being able to prod the throttle and the grunt would just pull me from low revs, ie; around 2000rpm was what I wanted more of, in reality the car kicks down because the gearbox thinks I have put my foot down more than I actually have (according to the remapman).
Do you know of a gearbox remap to overcome this so I can use the torque rather than the top end bhp?
Can you see what seems to be happening and if so would you agree that this is what happens?

100% agree, in normal driving the car should be using the highest gear possible and not down shift at just a hint of throttle, the gearbox should be remapped to get the most out of it, if the engine runs out of meaningful power at 3.5k its useless holding the gear to 4.5k... just to confirm what car/engine is this on?

I was made to feel that I should have been grateful that the old gal revs well, of which she does, silky smooth all the way round to the red bit on the tacho, but I dont use her on a track and I have no need to or would want to drive her in that manner, besides the speedo climbs quite quickly when usuing all the revs and she wasn't made for that style of driving-neither was my license.

It (she) is a 2000 (yr) E320 cdi Avantgarde estate auto, the car has done nearly 150,000 miles although the engine was (expensively by Mercedes) replaced at about 85,000 so the engine has only done about 65,000 miles,
Pretty well fsh from Merc garage initially with lots of receipts and money spent on her, then a Merc independant specialist for the normal servicing and gearbox oil/filter change.
