A few bodyshops who do vinyl wrapping or interior mods can probably do this and wrap the trim in carbon fibre vinyl. Something I have thought of as well...
Acton Coachworks in London do this ( Vehicle customisation at Acton Coachworks Bodyshop, London ) and I`m sure you can find someone in the midlands to as well..

Why not buy some 3M DI-NOC off the bay and do it yourself!!

I also thought about getting the interior wrapped in carbon, i recently got my mirrors, front grill, rear bumper and front bumper bottom edges wrapped in carbon fibre by from a company named MINT MY RIDE in nottingham. They did a quality job, i was really happy. I asked weather they could do my interior, they said yes BUT they would have a problem doing the steering wheel.
Im still looking around for another place, il be sure to let you know if i find anything.

The 3m vinyl is good but its nowhere near the real stuff, I personally would not have it in my interior.
My car is nearly finished and is to include a carbon trim (not wrap) I'm currently talking to a few different company's to get the best quality for the best price but finding it very hard.
