Quick Sphere bleeding question

I,ve just started to change the rear spheres on my W210 estate today and both the 17mm pipes were totally solid into the spheres (applied penetrating oil for a few days before) so I have had to order 2 x new pipes which will be with me tomorrow.
My question is:
When the new spheres/pipes are back in place, and I get someone to start the car so I can fill the resovoir (I,m presuming the level will drop quickly?)
Do I pre fill the resovoir to the top before starting the car?
When the engine is running do I turn the engine off again when the level looks like its getting two low?
The reason I ask is that I unscrewed resovoir cap once when the engine was running and fluid started to leak out so wondered if it could be run with the cap off?
 
It can be run with the cap off. Your system is over-full due to the gas from the ruptured spheres.
