As said above - there's a maximum rev limiter in gear anyway, and in park or neutral it's set around 4000RPM in most modern MBs AFAIK.

I used to do the revving through the tunnels in the 55 in neutral and it deffo does not have a rev limiter when you're moving:o
 
Similar thing in my w115, going down a mountain road with no barrier (was in Greece) over took a slow moving car but the car kept on going after i lifted off the gas and I headed to a sharp bend. Shifted into neutral and used brakes to scrub speed.Luckily I had a Bosch rev limiter rotor arm so con rods didnt start flying out of the engine bay!

check there is no rust at the floor where pedal kicks down onto kickdown switch.

the switch has been known to get depressed partially through floor due to floor badly corroded at that point, and causes pedal to stick to it.
