The petrol tank in a W203 C-class is sort of a saddle bag shape over the axel, does anyone know if this means the car has to fuel pick up pipes, one from each side? Also, how does the fuel pick up work, when is one side used and when does it switch to the other side?

There are two fuel senders which measure the fuel level for the same reason that you just mentioned.

There is only one fuel pump and to see if there is more than one pickup hose you would need to open each sender.
 
If its anything like the MG ZF then the pump is on the passengers side under the back seat and a separate filter is on the right. There are two pipes running from the left to the right. The pump picks up from the left side and also transfers fuel from right to left.
