I have 235 60 18 103v. The dealer is offering Bridgstone so for insurance I guess I should go with those. The offset on the MB website is 40mm.
The five spoke look easy to clean.

Not sure what you mean about insurance but a change of wheel/tyre is unlikely to have much financial impact on your insurance premium (though i would notify them) and is unlikely to cost anything like the difference between the wheel/tyre combo an MB dealer will sell you and what is available aftermarket.
Each to their own but I wouldn't ever go back to Bridgestone - had them on several cars in the past and the wear was always rubbish and the grip so-so.
I have no axe to grind either way but the Nokian Weatherproof is available in 235/60 R18 XL with a slightly higher load rating of 107v, it also has an EU tyre rating as follows: Economy: C, Wet Grip: A, Noise: 69dB and if it's the same as mine the Treadwear is 420 or 440 from memory. Compare that to the Bridgestone tyres and I'm pretty sure you will find they are worse on all counts.
The MAK Stern alloys are available to fit your GLC in 8x18 with an offset ET35, so 5mm further out, which is a negligible difference, unlikely to result on any ill effects - that's not a throw away comment but is based on 34 years experience modifying cars
If you want an exact ET match then the MAK Stadt is available in 8Jx18 ET40.
Total price for a set of the MAK Stern/Stadt alloys, plus Nokian Weatherproof tyres in your size looks like about £1,000 (alloys at £600 and tyres at £400) - have a word with Andy at Performance Alloys and see what he can do for you.
If you source some Mercedes OE TPS valves I'm sure he would fit them for you - or you could ask him to supply you the wheels/tyres loose and get them fitted and balanced yourself for about £40
