What is the difference between Mobil ESP and Mobil 3000 XE?

What engine oil should I use in a French Flathead V8, which is basically the same engine as a Mercury 1952 flathead 4.2 litre V8 but with an earlier sump?
 
Without doubting that it's better oil than the economy stuff costing around 1/3 of the price, is it actually worth it? Will the average car owner, whether a hobby car or a heavy mileage car, ever actually get enough gain to see the extra money returned by having a 'more efficient' engine that should have suffered 'less wear'?
 
Got some low ash 10/40 for the car. The brand is Shell. I wonder if it will work with my CLS 350 CDI. Normally I normally use 0/30 low ash.I change the oil every 6 months with an annual service every year. The above oil is used on sprinter engines with heavy town use.Do you have any recommendations?

Is that questing aimed at the Mobil brand specific, or do you want to ask is there is a really difference between FS / SS ??
