You require a donor car to do it economically as you will need all the pipework, condensor, evaporator, dash board trim and switches.. all the associated wiring loom, pump, new belts, all sorts of mounting brackets etc etc
If you get someone else to do the conversion, it's a £2k job, and I guess (pure guess) that may be £500 for the parts and £1500 for 20 or more expert man-hours.
A/C seems to be regarded as an essential option. I also gather that many (most?) people either don't use it, or use it rarely, for fear of guzzling fuel (not something my own figures agree with); that disuse causes its own problems, of course. All a bit silly really.
I have two cars with it and two without it; I notice the difference one or two days in high summer and one or two days in deep winter. That difference is trivial.
I used to say similar things.. neither my W123 or R107 have A/C and I never really missed it.. however my SEC has a/c and i use it all year round now..
The climate control is always (and by default) on in my cars, summer and winter. Whenever I drive other cars, I miss it terribly. Can't really be bothered if it ups the fuel consumption a bit .
It's not just the temperature control (although that is important to me), but also the fact that humidity is taken out of the air.
I used to have an A class without aircon and on rainy days with a car full i had to open the windows or I couldn't see thru the windscreen. A class is an awfal car IMHO

When I lived in the M/East Aircon was essential and always on, but now back in Uk we hardly use it in the Mrs Zafira and I havent really missed not having it in my W124 Coupe, having said all that, on days when my nose is streaming from the Hayfever I do miss it a little...
Why not just stick some freezer blocks in the fridge and stick them on your dashboard over the vents for those really hot days!!!
What ups the fuel consumption other than an additional pully on the drive belt with a little bit of extra load. Surely it is minimal, 3-5 days per year ?
