Missing Email Headers

I have just noticed that 1 person I used to be in contact with in germany sent emails without any headers whatsoever - basicaly a stealth email by all accounts. How can that be done ? I thought the whole email path was always contained in the header & put there by the different ISP's & mail servers along its route?

That depends on the software being used, in it's most basic form an e-mail can contain almost nothing.
 
Some headers (like Subject: and even To) are optional, and can be missed out altogether. But each mailserver along the route the email passed through should add its own header to the mail. If this header is very short, its possible the sender has connected directly to your mailserver, rather than going through any intermediate ones.

Can you post the full headers from the email message, so we can have a better look?
