Anybody ged any suggestions for how to protect the paint on the upper surface of the rear bumper from the dog's claws as they leap into the back of my W210 estate?

Getting rid of the dogs is not an option, according to the management.

Are their any lacquer-type products that would do the trick?

Perhaps a bit of silver wrap, or transparent fablon type material, though not sure how durable that would be.

i had the same problem but easily solved it by putting an old towel under some carpet offcuts, which stay in the car, and when the tailgate is up I just unfold the towel over the bumper amd when the dog is in, or out, just put the towel back in. It works for me.

You can get boot liners with a drop down flap which I would have thought would be ideal as long as you can stop the dogs from jumping out as soon as the door is opened.

ETA - this type of thing (I've got a feeling Mercedes might even sell an MB specific one?): http://www.amazon.co.uk/dp/B00281N1NC/?tag=amazon0e9db-21
