W211 E63 front discs and pads

So with the price of OEM ones and Racing Brake both around £1100 which would you go for?

And then the next question which pads to go for?

i'm sure that racing brake and evosport depending how long you keep your car but you can keep the hats and just change the discs

which in the future makes it a bit cheaper but then again discs last about 40-50k so does it make that much of a difference

Personally I'd stick with OEM, with standard OEM pads.
Pads are part number A0044208920, and a guy has several sets on ebay right now

Can someone tell me what's so special about the E63 front discs that make them soooo expensive? (Genuine question trying to understand why, not stir!!)

They are two piece 'floating' discs.

These are apparently better in that they allow the friction ring to expand and contract whilst not affecting the center section. This prevents disc warping and provides better centering

No one makes reproductions (at least this side of the atlantic) and that coupled with small volumes only used on the E63 and C63 performance pack makes them expensive
