When you turn your steering to full lock you are increasing the load on the engine as the power steering pump (DRIVEN BY THE POLY V BELT ON THE ENGINE) tries to move the wheels beyond the steering stops. You usually hear a slight whining from the pump when this happens which is a signal to back the steering off slightly. The engine fuel and ignition control units should sense this extra load and compensate for this to an extent to prevent stalling. I would suspect your ignition control unit is not getting a proper inlet manifold vacuum input so check all your vacuum take off points on the inlet manifold side to start with.
