A Question- if you write to a client (via email) stating a specific point and have proof that he has read it. Can your copy be edited afterwards so that it says something different? If so what legal proof is there that what was said in the original email is part of a contract?
I don't know if it can be edited - so raised this question.
A simple answer to your question is: yes - it can be edited.
The complex answer to your question is that it ranges from quite trivial to quite difficult to near impossible to change a message and that there are various degrees of traceability of a change varying from non-existent through weak to cryptographically strong.
These issues come up in large organisations where there is an issue of verification and accountability. Some organisations may use bespoke messaging systems or in many cases modified off-the-shelf setups such as Microsoft Outlook and Exchange Server to deal with the problem.
