Not done it personally but whilst its apart check the handbrake shoes inside the drum. They are frequently ignored/neglected. On ours they had disintegrated.

Not quite easy peasy but not difficult hardest part is getting the handbrake shoe springs & collet back on easy with the correct tool fiddly without , and sometimes getting the disc off, being a rear they will have been on for some time
I've never used the special tool for the parking brake shoes, can I can confirm that fitting them without it is a very frustrating and fiddly job.
Definitely a job worth doing when the rear discs are off as they're cheap enough and you probably won't have to change the rear discs again for a long time.
Hi your job will be easy if you can remove the caliper bolts .Give them a good squirt of penetrating oil, and let it soak in over night. Use a good fitting socket or ring spanner . I had one on each wheel i could not move so i used a small jack under the spanner, wind up the jack slow. Hope this helps you .

It is quite likely that the pins and spring clips will be corroded too. So it may be best to get them also.
On the older 124's the calipers tend to corrode when the pads mount in. This will make the pads either very loose or very tight (binding). Be prepared.
If this is your daily driver you are best to take it to a Merc indy.
There are so many things that can be troublesome for an inexperienced home mechanic that you shouldn't attempt it unless you have plenty of time and can do it over a few days.
Sometimes it's best to let the experts take the strain
