Before settling on my E350CDI I test drove a E250CDI and unless you're really going for it, there isn't that much difference in performance in normal road use.

7.5 for a big car is pretty fast to me, I have the c250cdi and it pulls like a train.
I bought an E200 with the low powered 1.8 (181bhp) petrol engine and I find it to be faster and to accelerate faster than is really necessary for me at least. Only downside is the fuel consumption as it's a small engine hauling a heavy car.
The 250 is obviously lower torque and power but the numbers are still very respectable. AIUI the torque curve is also a bit peakier than the 350 so it's a bit more dependent on the transmission shifting to get the best out of it.
