Good question, but they capture it, even the EV chargers capture data on you.. Its on the cloud and it could easily be hacked if there are any holes in the security. Some vehicles even capture photos of you as you approach the car.
One example.. if an MP or senior advisor / states person had an EV and a government wanted to spy on them and map their movements / activities.. they could easily. Its just another door open for them.
We are monitored enough these days. I have a car for freedom of movement, and car that takes this away cant be a good thing?
Firstly, looking at the list of high profile businesses that have been hacked - North Face and Cartier are two most recent ones (that's from earlier this week) - there's no reason to assume that European or North American car makers are any better than the Chinese in securing their data.
Then, this isn't an 'EV thing' as such, most modern high-end cars are 'connected cars' and regularly upload data to the manufacturers' datacentres with or without the customers being aware. In fact, the police have been using this for some time now to solve serious crimes - see for example:

That was 6 years ago..... you can only imagine what data car makers are collecting now.
