I've just bought an '89 560 SEL.

The car hasn't been used in anger for a couple of years, and I want to give it a good service / recommisioning.

Which parts and fluids should be changed in addition to the normal oil and filter?

I'm not a mechanic, but for peace of mind I would change ALL fluids and filters unless you have history and invoices that would suggest they are sound.

What I do whenever I have a new (to me) car:

Coolant flush and change
Gearbox oil and filter change
engine oil and filter
Rear diff oil
Brake fluid
PAS fluid and filter

Diffs get neglected, and it's not unusual to find that it's never been changed, which in turn is why many cars get scrapped, for the sake of some time and £20 in gear oil. Just my 2p.
 
Besides the fluids mentioned above - don't forget to replace the mineral oil and filter in the self levelling system .

I'd also look at the braking system : discs/pads/handbrake shoes/flexible hoses and replace anything that looks suspect . All perishable parts like coolant hoses , flexible couplings , engine mounts , tyres are worth checking too .

I imagine the brakes on your 560 are the same or similar to those on my 500SEL - I replaced all four discs/pads/shoes/sensors with OEM parts from ECP for a whisker under £200 - a small price for peace of mind .

Check the condition of hydraulic lines underneath as they often corrode unnoticed until one springs a leak .

Check all ball joints too.
